Scary vampire linguine!

Halloween food can be anything but regularโ€”it’s got to be scary!

For the Green Linguine:

  • 300g (10.5 oz) green linguine pasta
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon green food colouring (adjust to desired colour)
  • Salt, to taste

For the Tomato Sauce:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 400g (14 oz) canned crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sugar
  • Salt and pepper, to taste

Scary Garnish:

  • Cheese – for eyes and fangs
  • Tomatoes – for red eyes
  • Black olives, sliced – for spooky eyeballs
  • Green olives whole – for vampire mouth

Prepare the Green Linguine:

  • Cook the green linguine according to the package instructions until al dente. Drain and set aside.
  • In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sautรฉ for about 1 minute.
  • Stir in the cooked green linguine and green food colouring. Toss until the pasta is evenly coated with the vibrant green colour. Add salt to taste. Keep warm.

2. Make the Tomato Sauce:

  • In a separate saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sautรฉ until they become translucent, about 3-4 minutes.
  • Stir in the canned crushed tomatoes, dried basil, dried oregano, sugar, salt, and pepper. Simmer for 15-20 minutes, stirring occasionally, until the sauce thickens and flavours meld.

3. Serve and Garnish:

  • Divide the green linguine among serving plates around the edge.
  • Spoon the tomato sauce over the linguine, creating a spooky face.
  • Garnish with circles of cheese for eyes with a tomato and halved black olive placed on top.
  • Make a mouth out of a line of green olives
  • Add a spooky set of fangs by cutting the shape out of cheese
  • Have fun! If you have other ideas to make spookier
