Middle Eastern cuisine is known for its rich, aromatic flavours, thanks to the use of key herbs and spices that create warm, fragrant dishes. Common spices include cumin, coriander, sumac, and za’atar, adding earthy, tangy, and citrusy notes. Cardamom, turmeric, and cinnamon are often used in both savoury dishes and desserts. Fresh herbs like mint and parsley provide refreshing elements, while rosewater and orange blossom water add delicate floral tones to sweets.
