  • 680g)baby potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon ground caraway
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley (optional, for garnish)
Instructions:  
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the baby potatoes with olive oil, ground caraway, salt, and black pepper until evenly coated.
  3. Place the coated potatoes on a baking sheet in a single layer.
  4. Roast in the preheated oven for about 30-35 minutes or until the potatoes are crispy on the outside and tender on the inside.
  5. Remove from the oven and garnish with fresh parsley if desired.
  6. Serve the caraway roasted potatoes as a delicious side dish.
