Crete is our island, the southern most part of Europe, known, among other things, for the Cretan diet and longevity of its inhabitants. An integral part of this diet is its Thyme honey known since Minoan times in Ancient Greece. A unique variety of honey that boasts a rich aroma and delicate flavour with very popular characteristics On occasions, raw honey may crystallise which indicates the purity of the honey, to bring it back to its original form simply place in a bowl of warm water. Try thyme honey:
  1. Sweetener: Use it as a natural sweetener in beverages like tea, coffee, or lemonade. It can also be drizzled over pancakes, waffles, or yogurt for added sweetness and flavor.
  2. Salad dressings: Incorporate thyme honey into homemade salad dressings to give them a unique twist. Its herbaceous notes pair well with fresh greens, citrus fruits, and goat cheese.
  3. Baking: Add thyme honey to baked goods such as bread, cakes, and cookies to infuse them with a subtle herbal sweetness. It works particularly well with recipes that include lemon, orange, or almond flavors.

  Delicious recipe idea: Thyme Honey Roasted Carrots Ingredients:
  • 450g baby carrots, peeled and trimmed
  • 2 tablespoons olive oil
  • 2 tablespoons thyme honey
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper, to taste
Instructions:
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the baby carrots, olive oil, thyme honey, fresh thyme leaves, salt, and pepper. Toss well to coat the carrots evenly.
  3. Arrange the coated carrots in a single layer on a baking sheet.
  4. Roast the carrots in the preheated oven for about 20-25 minutes or until they are tender and caramelised, stirring once or twice during cooking.
  5. Remove from the oven and let them cool slightly before serving.
