BBQ Chicken Shish Kebabs

  • 500 g boneless, skinless chicken breasts, cut into 2-inch chunks
  • 2 tablespoons olive oil
  • 2 tablespoons barbecue sauce
  • 2 tablespoons honey (for a delightful alternative try our Royal Bee thyme honey)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 2 lemons halved
  • Salt and black pepper, to taste
  1. In a large bowl, combine the olive oil, barbecue sauce, honey, Worcestershire sauce, smoked paprika, garlic powder, salt, and black pepper. Mix well to create a marinade.
  2. Add the chicken chunks to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour or overnight for the best flavour.
  3. Meanwhile, soak wooden skewers in water for about 30 minutes to prevent them from burning on the grill.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated chicken onto the soaked skewers, alternating between the ingredients.
  6. Place the skewers on the preheated grill and cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
  7. Remove the skewers from the grill and let them rest for a few minutes before serving.
  8. Place a little olive oil on the cut lemon edge and place under the grill until caramelised, add a little sea salt
  9. Serve the BBQ Chicken Shish Kabobs hot, garnished with the lemon halves and fresh herbs if desired. They pair well with a side of rice or a crisp salad.
