Mango gazpacho

An exotic and spicy twist to the original Spanish dish Gazpacho. This delicious cold soup is soo delicious, the flavour will make your mouth water.

Ingredients

3 mangoes
1 tomato
½ cucumber
½ green bell pepper
1 garlic clove
4 tbsp olive oil
3 tbsp apple cider vinegar
1 tbsp toasted sesame seeds
½ tsp Greenfields ground cardamon
pinch Greenfields sumac
Servings

Instructions

Peel and chop mango and cucumber, blend together with remaining ingredients - except for the sumac and sesame seeds. 

Refrigerate for 2 hours, sprinkle each dish with the sesame and sumac then serve
