Superfood salad with flax oil

  • 1 head of red chicory (approximately 200g)
  • 2 blood oranges
  • 1/4 small red cabbage (approximately 200g)
  • 1 pomegranate
  • 50g walnuts
  • 2 tablespoons flax oil
  • Salt and pepper to taste
  • Optional: a handful of fresh herbs (such as parsley or mint) for garnish

Prepare the Ingredients:

  • Wash and dry the red chicory, then chop it into bite-sized pieces.
  • Peel the blood oranges and slice them into thin rounds.
  • Shred the red cabbage finely.
  • Remove the seeds from the pomegranate. (Tip: Cut the pomegranate in half and tap the back with a spoon to release the seeds easily.)
  • Roughly chop the walnuts.

Assemble the Salad:

  • In a large salad bowl, combine the chopped red chicory, shredded red cabbage, blood orange slices, and pomegranate seeds.
  • Add the chopped walnuts on top.

Dress the Salad:

  • Drizzle the flax oil over the salad.
  • Season with salt and pepper to taste.
  • Toss gently to combine all ingredients.

Garnish and Serve:

  • If desired, garnish with fresh herbs.
  • Serve immediately and enjoy!
