Cajun Chicken & Corn Hash with Spicy Lime Mayo

This vibrant one-pan Cajun hash is everything you want in a weeknight dinner—simple, bold, and bursting with texture. With the signature warmth of Greenfields Cajun Seasoning, juicy chicken thighs, and sweet corn kernels mingling with crispy potato, it’s finished off with a zesty lime mayo that balances heat with creaminess. Perfect served solo or topped with a fried egg for brunch vibes.

For the hash:

  • 2 chicken thighs (boneless, skinless), chopped

  • 2 tsp Greenfields Cajun Seasoning

  • 300g waxy potatoes, diced (skin on)

  • 100g sweetcorn (fresh, frozen or tinned)

  • ½ red onion, thinly sliced

  • 1 red pepper, diced

  • 1 tbsp olive oil

  • Salt, to taste

  • Handful of fresh coriander, chopped

For the spicy lime mayo:

  • 3 tbsp mayonnaise

  • Juice of ½ lime

  • 1 tsp Greenfields Cajun Seasoning

  1. Marinate the chicken – In a bowl, toss the chopped chicken thighs with 2 tsp Greenfields Cajun Seasoning and a little oil. Set aside while prepping other ingredients.

  2. Cook the potatoes – In a large non-stick frying pan over medium heat, add a splash of oil. Cook the diced potatoes for 10–12 minutes until golden and nearly tender, stirring occasionally.

  3. Add the veg – Add red onion and red pepper to the pan. Cook for another 5 minutes, then stir in the sweetcorn.

  4. Cook the chicken – In a separate pan, cook the seasoned chicken for 6–8 minutes until browned and cooked through.

  5. Combine & finish – Add the cooked chicken to the hash pan. Stir through, taste for salt, and cook for another 2–3 minutes to let everything come together.

  6. Make the mayo – Mix the mayonnaise, lime juice, and Cajun seasoning until smooth. Add a splash of water if you’d like it thinner.

  7. Serve – Spoon the hash into bowls, drizzle with spicy lime mayo, and scatter with chopped coriander.
