Spicy Cajun flavours in classic quesadillas

Cajun chicken quesadillas

Perfect for a quick lunch, dinner, or even a party snack. Packed with seasoned chicken, melted cheese, and fresh vegetables, this dish is satisfying and easy to prepare.

Serves: 4

  • 2 chicken breasts (approx. 400g), diced
  • 2 tbsp Greenfields Cajun seasoning
  • 1 tbsp olive oil
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 red onion, diced
  • 150g grated cheddar cheese
  • 150g grated mozzarella cheese
  • 4 large flour tortillas
  • Sour cream, salsa, and guacamole (optional, for serving)

Prepare the Chicken:

  • In a bowl, toss the diced chicken with the Cajun seasoning until evenly coated.
  • Heat the olive oil in a large frying pan over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, or until fully cooked and no longer pink in the middle. Remove the chicken from the pan and set aside.

Cook the Vegetables:

  • In the same pan, add the diced red and green bell peppers and the red onion. Cook for 4-5 minutes, or until the vegetables are softened. Remove from the pan and set aside.

Assemble the Quesadillas:

  • Heat a large non-stick frying pan over medium heat. Place one tortilla in the pan.
  • Sprinkle a layer of cheddar and mozzarella cheese over half of the tortilla.
  • Add a portion of the cooked chicken and vegetables on top of the cheese.
  • Sprinkle another layer of cheese over the chicken and vegetables, and then fold the tortilla in half.
  • Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.

Serve:

  • Repeat the assembly and cooking process with the remaining tortillas and filling.
  • Cut each quesadilla into wedges and serve with sour cream, salsa, and guacamole if desired.
