Cajun spiced salmon with mango salsa

Perfect for a weeknight dinner or a special occasion, this recipe balances spice and sweetness, delivering a delicious, healthy meal in under 30 minutes. Rich in omega-3 fatty acids, vitamins, and minerals, making it a nutritious choice for any meal.

Serves: 4

For the Cajun Spiced Salmon:

  • 4 salmon fillets (approx. 150g each)
  • 2 tbsp Cajun seasoning (shop-bought blend)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 lemon (optional, for serving)

For the Mango Salsa:

  • 1 large ripe mango, peeled, pitted, and diced
  • 1/2 red onion, finely chopped
  • 1 red pepper, diced
  • 1/2 cucumber, diced
  • 1 small red chilli, finely chopped (optional, for extra heat)
  • Juice of 1 lime
  • A handful of fresh coriander, chopped
  • Salt to taste

Try a simple mix of mayo, paprika and lime juice to drizzle over the top.

Preheat the Oven:

  • Preheat your oven to 200°C (180°C fan) or Gas Mark 6.

Prepare the Salmon:

  • Pat the salmon fillets dry with kitchen paper.
  • Drizzle the olive oil over the salmon fillets and rub it in to ensure an even coating.
  • Sprinkle the Cajun seasoning generously over each fillet, pressing it lightly to adhere.
  • Season with a little salt and pepper if desired.

Cook the Salmon:

  • Place the seasoned salmon fillets on a baking tray lined with parchment paper.
  • Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • If you prefer a charred finish, you can place the salmon under a hot grill for the last 2 minutes of cooking.

Prepare the Mango Salsa:

  • While the salmon is cooking, combine the diced mango, red onion, red bell pepper, cucumber, and chili (if using) in a medium bowl.
  • Squeeze the lime juice over the salsa, add the chopped coriander, and season with a pinch of salt.
  • Toss everything together until well mixed.

Serve:

  • Once the salmon is cooked, remove it from the oven and let it rest for a minute.
  • Serve the Cajun-spiced salmon fillets topped with a generous spoonful of mango salsa.
  • Optionally, squeeze a little lemon juice over the top before serving.
