Cane molasses and peach jam chicken

Offers a wonderful balance of savoury and sweet, making it a perfect option for a family dinner or a special occasion. The caramelised glaze formed by the molasses and jam adds a unique depth of flavour to the tender chicken, while the subtle hints of garlic and thyme provide a lovely aromatic touch. Whether served with roasted vegetables, fluffy mashed potatoes, or a fresh salad, this dish is sure to become a new favourite.

Ingredients

  • 4 chicken breasts (about 150g each)
  • 2 tablespoons cane molasses
  • 2 tablespoons peach jam
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • ½ teaspoon dried thyme
  • Salt and pepper, to taste
  • Prepare the chicken: Preheat your oven to 200°C (180°C fan/gas mark 6). Season the chicken breasts with salt and pepper on both sides.
  • Make the glaze: In a small bowl, whisk together the cane molasses, peach jam, minced garlic, olive oil, soy sauce, Dijon mustard, and dried thyme until well combined.
  • Sear the chicken: Heat a large, heavy based pan over medium heat. Add a bit of olive oil to the pan and sear the chicken breasts for 2-3 minutes on each side, until golden brown.
  • Apply the glaze: Once the chicken is seared, remove the pan from the heat. Brush the glaze generously over the chicken breasts, ensuring they are well coated.
  • Bake: Transfer the pan to the preheated oven and bake for 25-30 minutes, or until the chicken is fully cooked through (juices should run clear, and the internal temperature should reach 74°C).
  • Rest and serve: Once cooked, remove the chicken from the oven and let it rest for 5 minutes before serving. This allows the juices to redistribute, keeping the chicken moist and flavourful.
