Dukkah salmon patties

Easy to prepare and make for a versatile meal that can be served with a fresh salad, in a sandwich, or as an appetiser.

  • Preparation Time: 20 minutes
  • Cooking Time: 10 minutes
  • Total Time: 30 minutes
  • 400g fresh salmon fillets, skin removed
  • 100g cooked and mashed potatoes
  • 6 tbsp dukkah blend
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh coriander, chopped
  • 2 tsp lemon zest
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 2 tbsp olive oil for frying

Prepare the Salmon Patties:

  • Chop the salmon fillets finely or pulse in a food processor until coarsely minced.
  • In a large bowl, combine the minced salmon, mashed potatoes, chopped onion, minced garlic, beaten egg, parsley, coriander, lemon zest, and lemon juice. Season with salt and pepper.
  • Mix the ingredients until well combined. If the mixture is too wet, you can add a small amount of breadcrumbs to help bind it.
  • Divide the mixture into 8 equal portions and shape each portion into a patty.

Coat the Patties:

  • Place the prepared dukkah spice mix on a plate.
  • Press each patty into the dukkah mix, coating both sides thoroughly.

Cook the Patties:

  • Heat the olive oil in a large frying pan over medium heat.
  • Fry the patties in batches, cooking for about 4-5 minutes on each side, or until golden brown and cooked through.

Serve:

Serve the dukkah salmon patties hot, with a side salad, in a sandwich, or with your favourite dipping sauce.
