Easy jerk chicken

If you’re after a bold, flavour-packed dish that doesn’t keep you in the kitchen for hours, this easy jerk chicken is perfect. Using Greenfields Jerk Seasoning means you can enjoy authentic Caribbean flavour with minimal fuss. All you need is a few simple ingredients, and in no time you’ll have juicy chicken that’s delicious hot or cold – perfect for midweek dinners, BBQs, or even meal prepping.

Preparation: 10 minutes
Marinating: 30 minutes (or overnight if you prefer)
Cooking: 35 minutes
Total: 45 minutes (plus marinating time)

  • 1.2 kg chicken drumsticks and thighs (skin on for best flavour)

  • 3 tbsp Greenfields Jerk Seasoning

  • 2 tbsp olive oil

  • Juice of 1 lime

  • 2 garlic cloves, crushed

  • 1 tbsp Greenfields Cane Molasses (optional, for a sweet sticky glaze)

  • Fresh coriander, to garnish

  • Lime wedges, to serve

  1. In a large bowl, mix together the Greenfields Jerk Seasoning, olive oil, lime juice, garlic, and cane molasses (if using).

  2. Add the chicken pieces, turning to coat well. Cover and marinate for at least 30 minutes, or overnight for deeper flavour.

  3. Preheat the oven to 200°C (fan 180°C) or fire up the BBQ.

  4. Place the chicken on a baking tray lined with foil, skin side up. Roast for 35–40 minutes until golden and cooked through (juices should run clear). For a BBQ, cook over medium-hot coals for 30–35 minutes, turning often.

  5. Garnish with fresh coriander and serve with lime wedges.

Pair with coconut rice and peas for a true Caribbean feast. For extra heat, sprinkle over Greenfields Hot Chilli Flakes before cooking. Leftovers are delicious shredded into wraps or salads.
