This recipe is a vibrant fusion of smoky, citrusy chargrilled chicken infused with ginger and lemon, paired perfectly with a sweet, zingy mango salsa. It’s inspired by Caribbean-style grilling and tropical flavours, combining spice, fruit, and freshness in every bite.

Ingredients (serves 4):
For the chicken marinade:
4 skinless chicken breasts
2 tbsp olive oil
Juice and zest of 1 lemon
1 inch fresh ginger, finely grated
2 garlic cloves, crushed
1 tsp hot smoked paprika
1 tsp sea salt
½ tsp black pepper

For the mango salsa:
1 ripe mango, diced
½ small red onion, finely chopped
½ red chilli, deseeded and finely chopped
Juice of ½ lime
1 tbsp chopped fresh coriander
Pinch of sea salt

To serve:
Cooked basmati rice or warm flatbreads
Optional: lime wedges and extra coriander

In a large bowl, mix the olive oil, lemon juice and zest, grated ginger, garlic, hot smoked paprika, salt and pepper. Add the chicken breasts and coat well. Cover and refrigerate for at least 1 hour, or overnight for deeper flavour.

While the chicken marinates, prepare the mango salsa. Combine the diced mango, red onion, chilli, lime juice, coriander and a pinch of salt in a bowl. Mix gently and chill until ready to serve.

Preheat a griddle pan or barbecue to medium-high heat. Remove chicken from the marinade and grill for 5–6 minutes per side, or until charred on the outside and fully cooked through.

Rest the chicken for a few minutes before slicing.

Serve the chicken with a generous spoonful of mango salsa, a side of rice or flatbreads, and lime wedges if desired.
