This recipe is a happy accident from the Greenfields kitchen — I wanted something with the fresh pop of lime but without the liquid that can make brittle tricky. Enter Greenfields Lime Powder — a concentrated punch of citrus magic. Pair it with nutty sesame seeds, warm ginger, and a hint of sea salt, and you’ve got snackable shards that burst with flavour. It’s part Asian-inspired, part retro sweet shop, and completely addictive.

150g white sesame seeds (Greenfields White Sesame Seeds)
200g caster sugar
60ml water
2 tbsp runny honey
1 tsp Greenfields Lime Powder
½ tsp Greenfields Ground Ginger
½ tsp Himalayan Pink Salt (Fine)
1 tbsp butter (or vegan butter alternative)
Lightly toast the sesame seeds in a dry frying pan for 3–4 minutes until fragrant. Set aside.
In a heavy-based saucepan, combine sugar, water, and honey. Heat gently until the sugar dissolves, then bring to a steady boil without stirring.
Continue boiling until the syrup reaches a deep golden caramel (around 150°C if using a sugar thermometer).
Remove from the heat and quickly stir in the butter, sesame seeds, lime powder, ginger, and salt. Work quickly as it will set fast.
Pour the mixture onto a parchment-lined tray, spreading thinly with a spatula.
Let cool completely before breaking into shards or clusters.
Store in an airtight jar for up to two weeks.

What shipping methods are available and how much?
We use Royal Mail second class postal service for all orders. Shipping is free when you order is £30 or more or have 10 or more items in your basket, a standard £4.99 charge will be applied for any cart containing less than £30 worth of products or less than 10 products.
