Portions: 4 burgers
Prep Time: 20 minutes
Cook Time: 15 minutes
Total Time: 35 minutes
500g lamb mince
1 small red onion, finely chopped
2 garlic cloves, minced
1-inch piece of fresh ginger, grated
1 green chilli, finely chopped (optional for extra heat)
1 tsp ground cumin
1 tsp garam masala
½ tsp ground coriander
½ tsp paprika
½ tsp turmeric
½ tsp salt
¼ tsp black pepper
1 tbsp fresh coriander leaves, chopped
1 tbsp vegetable oil (for frying or brushing on the grill)
4 burger buns (brioche or seeded, your choice)
4 tbsp natural yoghurt
1 small cucumber, grated and lightly salted
A handful of fresh coriander leaves
1 small red onion, thinly sliced
Lettuce leaves (optional)
Mango chutney (optional, for a sweet contrast)
Make the patties:
In a large mixing bowl, combine the lamb mince with the onion, garlic, ginger, green chilli, spices, salt, pepper, and fresh coriander. Mix thoroughly using your hands or a spoon until everything is well incorporated. Shape the mixture into 4 equal-sized patties.
Prepare the raita:
Squeeze the excess moisture from the grated cucumber and mix with the yoghurt. Season with a pinch of salt and a few coriander leaves. Chill until needed.
Cook the burgers:
Heat a griddle pan or BBQ on medium-high heat. Brush the patties with oil and cook for 5–6 minutes per side, or until cooked through and nicely charred.
Toast the buns:
While the burgers are cooking, lightly toast the burger buns on the grill or in a dry frying pan.
Assemble:
Spread a spoonful of cucumber raita on the base of each bun. Add lettuce (if using), a lamb patty, sliced onions, a drizzle of mango chutney (if using), and finish with a few coriander leaves. Top with the bun lid and serve hot.
