Spooky Black Nigella Seed Toffee Apples

Forget the usual orange and red — this Halloween, it’s all about the dark side of sweet. Our Spooky Black Nigella Seed Toffee Apples are a thrilling twist on the traditional fairground favourite. The glossy midnight sheen comes from black food colouring, while Greenfields Black Nigella Seeds add subtle nuttiness and a mysterious crunch that feels straight out of a witch’s cauldron. They’re fun to make, wickedly beautiful, and totally Instagram-worthy.

Makes 6 toffee apples

  • 6 medium apples (Granny Smith or Braeburn work well)

  • 400g caster sugar

  • 100ml water

  • 1 tbsp golden syrup

  • ½ tsp black food colouring gel

  • 2 tsp Greenfields Black Nigella Seeds

  • A pinch of Greenfields Himalayan Pink Salt (Fine)

  • Wooden sticks for the apples

  • Optional: edible gold dust or flakes for a magical touch

  • Wash the apples in hot water to remove any wax, then dry thoroughly and push a wooden stick firmly into the centre of each apple.

  • Line a baking tray with parchment paper and lightly oil it.

  • In a large saucepan, combine the sugar, water, and golden syrup. Heat gently until the sugar dissolves.

  • Bring to the boil without stirring, until the mixture reaches 150°C (hard crack stage) on a sugar thermometer.

  • Remove from the heat and quickly stir in the black food colouring, Greenfields Nigella Seeds, and a pinch of Greenfields Himalayan Pink Salt.

  • Working swiftly, dip each apple into the glossy black toffee, twisting to coat evenly. Place on the prepared tray to set.

  • Once cool, dust lightly with edible gold for a magical, eerie shimmer.

For an extra chilling twist, drizzle melted white chocolate over the cooled apples to create a spiderweb effect!
