Combining the bold flavours and colours of red chicory, blood orange, and red cabbage with the sweetness of pomegranate seeds and the nutty crunch of walnuts, this salad is not only delicious but also packed with health benefits. Flax oil adds a dose of omega-3 fatty acids, making this dish a perfect choice for those looking to boost their overall wellness. Ideal for a light lunch or a refreshing side dish, this salad is easy to prepare and sure to impress.

  • 1 head of red chicory (approximately 200g)
  • 2 blood oranges
  • 1/4 small red cabbage (approximately 200g)
  • 1 pomegranate
  • 50g walnuts
  • 2 tablespoons flax oil
  • Salt and pepper to taste
  • Optional: a handful of fresh herbs (such as parsley or mint) for garnish

Prepare the Ingredients:

  • Wash and dry the red chicory, then chop it into bite-sized pieces.
  • Peel the blood oranges and slice them into thin rounds.
  • Shred the red cabbage finely.
  • Remove the seeds from the pomegranate. (Tip: Cut the pomegranate in half and tap the back with a spoon to release the seeds easily.)
  • Roughly chop the walnuts.

Assemble the Salad:

  • In a large salad bowl, combine the chopped red chicory, shredded red cabbage, blood orange slices, and pomegranate seeds.
  • Add the chopped walnuts on top.

Dress the Salad:

  • Drizzle the flax oil over the salad.
  • Season with salt and pepper to taste.
  • Toss gently to combine all ingredients.

Garnish and Serve:

  • If desired, garnish with fresh herbs.
  • Serve immediately and enjoy!
