If you’re a fan of bold flavours, fresh herbs, and that signature Ottolenghi twist of sharp-sweet-savoury, this one’s for you. Roasted cauliflower is rubbed with aromatic Greenfields Baharat, then served with a zingy salsa of Greenfields Barberries, red onion, and parsley. A silky tahini dressing with lemon and herbs ties it all together. This is a dish made to impress – perfect for feasting with friends or adding drama to your weeknight dinner.

For the roasted cauliflower:
1 large cauliflower, cut into florets
2 tbsp olive oil
1 tbsp Greenfields Baharat
½ tsp Greenfields Himalayan Pink Salt (Fine)
For the barberry salsa:
2 tbsp Greenfields Barberries (Zereshk)
½ small red onion, finely diced
1 tbsp white wine vinegar
1 tsp caster sugar
2 tbsp chopped flat-leaf parsley
1 tbsp olive oil
For the herby tahini dressing:
3 tbsp tahini
Juice of ½ lemon
1 small garlic clove, crushed
2 tbsp cold water (plus more as needed)
1 tbsp chopped coriander
Salt, to taste
To finish:
Toasted almonds or pine nuts (optional)
Extra herbs to garnish (parsley/coriander)
Pomegranate seeds (optional, for visual pop)
Preheat the oven to 200°C (fan 180°C).
Toss cauliflower with olive oil, baharat, and salt. Spread on a baking tray and roast for 30–35 mins until golden and crispy on edges.
While it roasts, soak the barberries in warm water for 5 mins. Drain and mix with diced red onion, vinegar, sugar, parsley and olive oil. Set aside.
In a small bowl, whisk tahini, lemon juice, garlic and cold water until creamy. Stir in chopped coriander. Add more water for drizzling consistency. Season to taste.
Arrange cauliflower on a serving platter. Spoon over barberry salsa and drizzle with herby tahini. Scatter with nuts, herbs and optional pomegranate seeds.
