Chicken Masala Skewers

There’s something irresistible about skewered chicken, especially when it’s coated in the deep red hues of a tandoori masala marinade. These skewers are simple to prepare but bursting with flavour – the perfect dish for summer BBQs, midweek grilling, or even a Friday night feast indoors. Using Greenfields Tandoori Masala seasoning, along with garlic, ginger and yoghurt, the chicken becomes tender, spicy, and aromatic. Pair with naan or a fresh salad, and you’ve got a meal that tastes like a treat but is easy enough for everyday.

  • Prep time: 15 minutes (+ 1 hour marinating)
    Cook time: 15 minutes

  • 600g chicken breast or thigh, cut into bite-sized chunks

  • 150g natural yoghurt

  • 2 tbsp Greenfields Tandoori Masala seasoning

  • 1 tsp Greenfields Ground Cumin

  • 1 tsp Greenfields Ground Coriander

  • 1 tsp Greenfields Hot Paprika

  • 3 garlic cloves, minced (or 1 tsp Greenfields Garlic Powder)

  • 1 tsp grated fresh ginger

  • Juice of 1 lemon

  • 1 tsp Greenfields Himalayan Pink Salt (Fine)

  • 2 tbsp vegetable oil

  • Fresh coriander leaves, chopped, to garnish

For the dip (optional):

  • 150g Greek yoghurt

  • 1 tbsp chopped mint (or 1 tsp Greenfields Mint)

  • Pinch of Greenfields Cumin Seeds, toasted and crushed

  • Squeeze of lemon juice

  1. In a large bowl, mix yoghurt, Greenfields Tandoori Masala seasoning, cumin, coriander, paprika, garlic, ginger, lemon juice, salt and oil.

  2. Add chicken chunks and stir well until coated. Cover and refrigerate for at least 1 hour (or overnight for best flavour).

  3. Soak wooden skewers in water for 20 minutes if using. Thread chicken pieces onto skewers.

  4. Heat grill, BBQ or oven (220°C, fan 200°C). Cook skewers for 12–15 minutes, turning occasionally, until chicken is charred at edges and fully cooked.

  5. Mix dip ingredients in a bowl and chill until ready.

  6. Serve skewers hot, garnished with coriander, alongside yoghurt dip, naan, or salad.

For extra smoky flavour, squeeze over a little lemon juice right after grilling. Thigh meat stays juicier than breast on skewers. You can also add peppers, onions, or courgette chunks to the skewers for colour and balance.
