Honey, chilli and lime roasted brussel sprouts

This vibrant dish combines the nutty, caramelised flavour of roasted Brussels sprouts with the sweetness of honey, the heat of chilli, and the zesty brightness of lime. Perfect as a side dish or a light snack, itโ€™s a creative twist that adds excitement to your table.

  • 500g Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 red chilli, finely chopped (adjust to taste)
  • Zest and juice of 1 lime
  • 1/2 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 1 tsp chilli flakes
  1. Preheat Oven: Preheat your oven to 200ยฐC (fan 180ยฐC)/Gas Mark 6.
  2. Prepare Brussels Sprouts: Place the halved Brussels sprouts in a mixing bowl. Add olive oil, salt, and pepper, tossing to coat evenly.
  3. Roast: Spread the sprouts on a baking tray in a single layer. Roast for 20โ€“25 minutes, turning halfway, until golden and slightly charred at the edges.
  4. Prepare Glaze: In a small bowl, mix honey, sliced chilli, lime zest, and lime juice.
  5. Coat Sprouts: Once roasted, transfer the sprouts back to the bowl. Drizzle the honey-chilli-lime glaze over them and toss gently.
  6. Serve: Serve warm, garnished with extra lime zest and chilli flakes.
