Lemon pepper chicken tenders

A blend of zesty citrus and spicy black pepper, perfectly balanced with the richness of buttermilk. Marinated to tender perfection

This recipe serves 4 people.

For the Chicken Tenders:

  • 500g chicken tenders or boneless chicken strips
  • 240ml buttermilk
  • 1 teaspoon salt
  • 2 teaspoons Greenfields lemon pepper blend
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 100g plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon paprika
  • Vegetable oil, for frying

For the Honey Sauce:

  • 120ml honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon soy sauce
  • 1 teaspoon garlic powder

Step 1: Marinate the Chicken

  1. In a large bowl, combine the buttermilk, salt, 1 teaspoon of the lemon pepper blend, garlic powder, and onion powder. Mix well.
  2. Add the chicken tenders to the buttermilk mixture, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

Step 2: Prepare the Breading

  1. In another bowl, combine the flour, baking powder, paprika, and the remaining 1 teaspoon of the lemon pepper blend.
  2. Remove the chicken tenders from the buttermilk marinade, allowing any excess to drip off. Coat each tender in the flour mixture, pressing gently to adhere.

Step 3: Cook the Chicken

  1. Heat about 2-3 cm of vegetable oil in a large frying pan over medium-high heat.
  2. Once the oil is hot (around 175°C), carefully add the chicken tenders in batches. Fry for 4-5 minutes on each side, or until golden brown and cooked through.
  3. Remove the tenders from the oil and drain on a paper towel-lined plate.

Step 4: Prepare the Honey Sauce

  1. In a small saucepan, combine the honey, Dijon mustard, lemon juice, soy sauce, and garlic powder.
  2. Heat over medium heat, stirring occasionally, until the sauce is warmed through and well combined.

Step 5: Serve

  1. Drizzle the warm honey sauce over the chicken tenders or serve it on the side for dipping.
  2. Garnish with additional lemon zest or fresh herbs if desired.
