This Spiced Pineapple Chai Frappe is an unusual and utterly delicious blend of sweet tropical fruit and aromatic spices. Drawing inspiration from both Indian chai and tropical beach drinks, it combines pineapple, creamy coconut, and a hint of warming spice into one cool and frothy treat. Perfect for hot days when you want something a little different, this frappe is both energising and comforting – like sunshine in a glass with a gentle hug of spice.

    • 250ml chilled pineapple juice (or frozen into cubes for extra thickness)

    • 120ml full-fat coconut milk (or oat milk for a lighter version)

    • 1 teaspoon ground cardamom

    • ½ teaspoon ground cinnamon

    • Pinch of ground clove

    • Pinch of ground black pepper

    • 2 teaspoons maple syrup or soft brown sugar (adjust to taste)

    • 1 cup (approx. 150g) crushed ice

    • Optional: 1 shot (30ml) of espresso for a ‘dirty chai’ variation

    • To serve: whipped coconut cream, pinch of ground nutmeg, small pineapple wedge

  1. Blend the pineapple juice, coconut milk, spices, sweetener, and crushed ice until frothy and smooth.

  2. Pour into chilled glasses.

  3. Top with whipped coconut cream and a dusting of nutmeg. Garnish and serve immediately.
