An easy, quick, no-churn recipe that combines the sweetness of mixed berries with the tangy zest of sumac, a spice renowned for its tart, lemony flavour.

Summer berry sorbet with sumac

Experience a burst of refreshing summer flavours with this easy-to-make berry sorbet with sumac. Perfect for a treat.

Servings: 4

Ingredients

  • 400g mixed berries (fresh or frozen)
  • 100g caster sugar
  • 1 tablespoon sumac
  • Juice of 1 lemon
  • 100ml water

Equipment

  • Blender or food processor
  • Fine mesh sieve
  • Freezer-safe container
  • Prepare the Berries:
  • If using fresh berries, wash and hull them if necessary.
  • Combine the berries, caster sugar, sumac, lemon juice, and water in a blender or food processor.
  • Blend:
  • Blend until smooth, ensuring the sugar is fully dissolved.
  • Strain:
  • Pour the berry mixture through a fine mesh sieve into a bowl, pressing down with a spoon to extract as much liquid as possible. Discard the pulp and seeds left in the sieve.
  • Freeze:
  • Pour the strained berry mixture into a freezer-safe container.
  • Place the container in the freezer for at least 4 hours or until the sorbet is firm. For best results, stir the mixture every hour for the first 2-3 hours to prevent large ice crystals from forming.
  • Serve:
  • Before serving, let the sorbet sit at room temperature for a few minutes to soften slightly.
  • Scoop into bowls or cones and enjoy!
