Scotch eggs have had a summer makeover! These bright little picnic heroes swap traditional pork for juicy chicken mince flavoured with Greenfields Za’atar, Sumac, Dill Weed and Preserved Lemon. Peas keep the filling fresh and colourful, while black and white sesame seeds give the crisp coating a playful confetti finish. Serve them with the vivid pink beetroot and Greek yoghurt dip for maximum summer cheer.

For the Scotch eggs:
7 medium free-range eggs
500g chicken mince
80g frozen petits pois, defrosted and lightly crushed
2 spring onions, finely sliced
2 tablespoons finely chopped Greenfields Preserved Lemon
1 teaspoon Greenfields Za’atar
1 teaspoon Greenfields Sumac
1 teaspoon Greenfields Dill Weed
½ teaspoon Greenfields Garlic Powder
½ teaspoon Greenfields Ground Cumin
½ teaspoon Greenfields Himalayan Pink Salt (Fine)
¼ teaspoon Greenfields Ground Black Pepper
50g plain flour
100g panko breadcrumbs
1 teaspoon Greenfields Smoked Paprika
1 tablespoon Greenfields White Sesame Seeds
1 tablespoon Greenfields Black Sesame Seeds
Sunflower oil, for deep-frying
For the pink beetroot dip:
150g thick Greek yoghurt
75g cooked beetroot, finely grated
1 teaspoon Greenfields Sumac
½ teaspoon Greenfields Dried Lime or Lime Powder
A pinch of Greenfields Himalayan Pink Salt (Fine)
To serve:
A handful of rocket or watercress
Sliced radishes
Cucumber ribbons
Fresh mint leaves
. Bring a saucepan of water to the boil. Carefully add 6 eggs and cook for 6½ minutes for softly set, jammy centres, or 8 minutes for firmer centres.
2. Transfer the eggs immediately to iced water. Leave for 10 minutes, then peel gently and pat dry.
3. Mix the chicken mince, crushed peas, spring onions, preserved lemon, Za’atar, Sumac, Dill Weed, Garlic Powder, Ground Cumin, salt and black pepper. Divide into 6 equal portions.
4. Flatten one portion of chicken mixture between two pieces of baking paper. Place a boiled egg in the centre, then carefully mould the chicken around it, sealing every gap. Repeat with the remaining eggs. Chill for 20 minutes.
5. Put the flour in one shallow bowl. Beat the remaining raw egg in a second bowl. In a third bowl, combine the panko, Smoked Paprika and both sesame seeds.
6. Roll each wrapped egg first in flour, then in beaten egg and finally in the colourful sesame crumb. Press gently so the coating adheres.
7. Heat 6–7cm of sunflower oil in a deep, heavy-based pan to 170°C. Carefully fry the Scotch eggs in small batches for 7–8 minutes, turning occasionally, until deeply golden and the chicken is completely cooked. The centre of the chicken layer should reach at least 75°C.
8. Drain on kitchen paper and rest for 5 minutes.
9. Make the dip by mixing the yoghurt, grated beetroot, Sumac, Dried Lime or Lime Powder and salt until rippled bright pink.
10. Serve the Scotch eggs whole or halved with the pink dip, rocket, radishes, cucumber ribbons, and mint.

What shipping methods are available and how much?
We use Royal Mail second class postal service for all orders. Shipping is free when you order is £30 or more or have 10 or more items in your basket, a standard £4.99 charge will be applied for any cart containing less than £30 worth of products or less than 10 products.
