Thai Peanut Turkey Burger

If you’re looking for a lighter alternative to a traditional burger without sacrificing flavour, this Thai Peanut Turkey Burger is exactly that. Inspired by the colourful, fresh styling of modern summer cafés, every bite combines juicy grilled turkey, creamy peanut sauce, crisp vegetables and fragrant herbs. Greenfields Thai 7 Spice adds authentic aromatic warmth while Greenfields Garlic Powder and Crushed Chillies create layers of flavour without overpowering the freshness.

For the turkey burgers

  • 500g turkey mince
  • 2 tsp Greenfields Thai 7 Spice
  • 1 tsp Greenfields Garlic Powder
  • ½ tsp Greenfields Crushed Chillies (optional)
  • 1 tsp Greenfields Ground Coriander
  • 2 spring onions, finely chopped
  • 1 tbsp fresh coriander, chopped
  • 1 egg
  • 40g breadcrumbs
  • Salt and freshly ground Greenfields Black Pepper

For the peanut sauce

  • 4 tbsp smooth peanut butter
  • 2 tbsp light soy sauce
  • Juice of 1 lime
  • 1 tbsp honey
  • 1 tsp Greenfields Lime Powder
  • 2 tbsp warm water

For the summer slaw

  • 100g shredded carrot
  • 100g shredded white cabbage
  • ½ cucumber, julienned
  • ½ red onion, finely sliced
  • Fresh coriander leaves
  • Juice of ½ lime

To serve

  • 4 brioche burger buns
  • Little Gem lettuce
  • Cucumber slices
  • Extra coriander
  • Greenfields White Sesame Seeds for sprinkling
  1. Combine the turkey mince with the Thai 7 Spice, Garlic Powder, Ground Coriander, Crushed Chillies, spring onions, coriander, egg and breadcrumbs. Season well and form into four generous burger patties.
  2. Mix together all the peanut sauce ingredients until smooth and creamy, adding a little more warm water if needed for a drizzle consistency.
  3. Toss together the carrot, cabbage, cucumber, red onion, coriander and lime juice to create a vibrant crunchy slaw.
  4. Heat a lightly oiled grill pan or barbecue over medium-high heat. Cook the burgers for around 5–6 minutes on each side until golden, lightly charred and cooked through.
  5. Lightly toast the brioche buns.
  6. Spread peanut sauce generously over both halves of each bun.
  7. Add lettuce, the grilled turkey burger, another drizzle of peanut sauce, the colourful slaw, cucumber slices and finish with fresh coriander and a sprinkle of Greenfields White Sesame Seeds.
  8. Serve immediately with crisp cucumber salad, sweet potato wedges or a fresh tropical fruit salad.
* Chilling the burger patties for 20 minutes before cooking helps them stay perfectly shaped. * Add sliced fresh mango to the burger for an extra tropical summer twist. * For extra heat, sprinkle over additional Greenfields Crushed Chillies before serving. * These burgers cook beautifully on the barbecue, giving them a lightly smoky finish.
