Burnt banana cream pudding with spiced biscuit crumble

Craving a getaway? This Burnt Banana Cream Pudding brings the holiday vibes home. With whipped cream, smoky banana, crunchy spiced biscuit crumble and caramelised banana slices, it’s indulgent, sunny, and totally worth getting out of bed for.

For the banana cream:

  • 2 ripe bananas

  • 200ml double cream

  • 1 tbsp icing sugar

  • ½ tsp vanilla extract

  • Pinch of sea salt

For the spiced biscuit crumble:

  • 4 spiced biscuits (e.g. speculoos, ginger nuts, or cinnamon digestives)

  • 1 tsp soft brown sugar

  • ½ tsp ground cinnamon

  • Pinch of nutmeg (optional)

  • 1 tsp melted butter

For the topping:

  • 1 banana, sliced

  • 1 tsp demerara sugar

  • A little butter for frying

  • Runny honey or maple syrup, to drizzle

  1. Make the spiced crumble: Crush the biscuits finely, then stir in brown sugar, cinnamon, nutmeg (if using), and melted butter. Toast in a dry pan or oven for 2–3 minutes until lightly crisp and fragrant. Set aside to cool.

  2. Roast the bananas: Peel the 2 ripe bananas and mash lightly. In a dry non-stick pan over medium-high heat, cook the banana mash until it starts to caramelise and darken (around 3–4 mins). Stir once or twice but let it “catch” for some smoky depth. Remove from heat and cool fully.

  3. Make the cream: Whip the double cream with icing sugar, vanilla, and a pinch of salt until soft peaks form. Fold in the cooled caramelised banana until swirled and fluffy. Chill if you like it thicker.

  4. Caramelise the banana slices: Heat a small knob of butter in a pan, add the sliced banana, and sprinkle with demerara sugar. Cook for 1–2 minutes per side until golden and slightly charred. Remove from heat.

  5. Assemble: In glasses or bowls, layer the banana cream, a spoonful of spiced crumble, and top with warm caramelised banana slices. Drizzle with honey or maple syrup just before serving.
