Charred Courgette, Butter Bean & Preserved Lemon Summer Pot

‘We made this on a warm Saturday evening with fresh bread and couldn’t believe how much flavour came from such simple ingredients.’

Some recipes feel like they belong outdoors, cooked slowly while the afternoon stretches into evening. This colourful summer pot is inspired by Mediterranean markets, where vegetables are kissed by flame before being folded into fragrant broths. The creamy butter beans soak up every drop of the smoky, citrus-infused sauce, while preserved lemon, dill and Aleppo chilli add freshness without overwhelming the dish. It’s the sort of meal best served with warm flatbreads and plenty of conversation.

  • 2 x 400g tins butter beans, drained
  • 2 medium courgettes, sliced lengthways
  • 2 small onions, quartered
  • 4 cloves garlic, left whole
  • 2 tbsp olive oil
  • 1 tbsp Greenfields Smoked Paprika
  • 1 tsp Greenfields Aleppo Chilli
  • 1 tsp Greenfields Ground Cumin
  • 1 tsp Greenfields Oregano
  • ½ tsp Greenfields Ground Coriander
  • 1 tbsp Greenfields Preserved Lemon, finely chopped
  • 700ml vegetable stock
  • 2 tbsp tomato purée
  • 150g cherry tomatoes
  • 2 tbsp Greek Thyme Honey (optional, for balance)
  • Small handful Greenfields Dill Weed
  • Small handful Greenfields Parsley
  • Fresh lemon wedges
  • Greenfields Himalayan Pink Salt & Cracked Black Pepper to taste
  1. Brush the courgettes and onions with olive oil and char them in a hot griddle pan or barbecue until deeply caramelised.
  2. Heat the remaining oil in a large casserole dish and gently cook the garlic for 2 minutes.
  3. Stir in the smoked paprika, Aleppo chilli, cumin, oregano and coriander. Cook for 30 seconds until fragrant.
  4. Add the tomato purée and cook for another minute.
  5. Pour in the vegetable stock before stirring through the butter beans, preserved lemon, honey (if using) and cherry tomatoes.
  6. Add the charred vegetables and simmer gently for 20–25 minutes.
  7. Finish with fresh dill, parsley and a squeeze of lemon juice.
  8. Serve with toasted sourdough, warm flatbreads or freekeh salad.
* Charring the vegetables before simmering adds incredible depth without needing lots of ingredients. * Preserved lemon gives a softer, more aromatic citrus flavour than fresh lemon. * Add a spoonful of Greenfields Harissa Paste for extra warmth. * This tastes even better the following day as the flavours continue to develop. * Delicious served warm rather than piping hot on summer evenings.
