Hot Wings and Tangy Lemon Chicken

For the Hot Wings:

  • 1.5 kg (3.3 lbs) chicken wings
  • 2 tablespoons vegetable oil
  • 4-5 tsp Greenfields hot wings seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried thyme

For the Lemon Chicken:

  • 500g boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 2 lemons
  • 2 tablespoons honey
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Fresh parsley, chopped (for garnish)
  1. Preparing the Hot Wings:
    • Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
    • In a large bowl, combine the vegetable oil, hot wings seasoning, salt, black pepper, and dried thyme. Mix well to create a marinade.
    • Add the chicken wings to the bowl and toss them until evenly coated with the marinade.
    • Arrange the wings on the prepared baking sheet in a single layer.
    • Bake in the preheated oven for approximately 30-35 minutes, or until the wings are cooked through and crispy.
  2. Preparing the Lemon Chicken:
    • In a separate bowl, combine the minced garlic, lemon zest, lemon juice, honey, dried oregano, salt, and black pepper. Mix well to create a marinade.
    • Add the chicken breast pieces to the bowl and toss them until they are coated with the marinade.
    • Heat the vegetable oil in a large skillet over medium-high heat.
    • Add the marinated chicken to the skillet and cook for about 5-7 minutes, or until the chicken is cooked through and golden brown.
    • Remove the chicken from the skillet and transfer it to a serving plate.
  3. Serving:
    • Arrange the hot wings and lemon chicken on a platter.
    • Garnish with freshly chopped parsley for a pop of colour and added freshness.
