Mango, Lime & Cardamom Kulfi Sundae

Some desserts simply taste like summer, and this is one of them. Layers of velvety cardamom kulfi-style ice cream, sweet ripe mango, whipped cream and crunchy pistachio coconut dukkah come together in a tall sundae glass that looks every bit as vibrant as it tastes. Inspired by the bright colours of tropical fruit and leisurely days in the sunshine, it’s a dessert that’s guaranteed to impress family and friends while showcasing the wonderful versatility of Greenfields herbs and spices.

Total time: Approximately 2 hours 20 minutes

For the cardamom kulfi

400ml whole milk

100ml double cream

3 tbsp condensed milk

1 tsp Greenfields Ground Cardamom

Pinch of Greenfields Saffron, soaked in 1 tbsp warm milk

1 tsp Greenfields Rose Water

2 tbsp finely chopped pistachios

For the mango layer

2 large ripe mangoes, diced

1 tbsp lime juice

1 tsp Greenfields Lime Powder

1 tbsp Greenfields Greek Pine Honey

For the crunchy topping

2 tbsp finely chopped pistachios

2 tbsp toasted desiccated coconut

1 tbsp Greenfields Dukkah

½ tsp Greenfields Sumac (optional for a citrusy finish)

To assemble

Whipped cream

Extra diced mango

Lime zest

Extra pistachios

A little extra Dukkah for sprinkling

  1. Gently heat the milk, cream and condensed milk until slightly thickened. Stir in the Ground Cardamom, saffron milk and Rose Water. Allow to cool before folding in the pistachios. Freeze for 2-3 hours, stirring once or twice during freezing for a softer texture.
  2. Mix the diced mango with the lime juice, Lime Powder and Greek Pine Honey. Chill until needed.
  3. Combine the pistachios, toasted coconut, Dukkah and Sumac to make the crunchy topping.
  4. Spoon a layer of mango into the bottom of each tall serving glass.
  5. Add generous scoops of the cardamom kulfi.
  6. Continue layering mango and kulfi until the glass is almost full.
  7. Pipe or spoon over plenty of whipped cream.
  8. Finish with extra mango cubes, crunchy topping, lime zest and a final dusting of Dukkah.
  9. Serve immediately with a long spoon and enjoy outdoors on a sunny afternoon.
For the sweetest flavour, use Alphonso or Kent mangoes if available. Prepare the kulfi a day ahead to make assembly effortless. For an extra luxurious finish, drizzle with a little condensed milk before serving. Add a tiny pinch of Greenfields Aleppo Chilli for a gentle sweet heat that complements the mango beautifully. Serve in clear glasses to show off the colourful layers.
