Roasted peach & burrata flatbread with dukkah honey drizzle

Typically described as:

This is not your average flatbread. Inspired by Middle Eastern spice blends and Italian antipasti, it brings together toasted dukkah, creamy burrata, and caramelised roasted peaches on a fluffy flatbread base. Finished with a spiced honey-lemon dukkah drizzle, this dish sings with warm textures and bold contrasts. It’s perfect for summer brunches, stylish starters, or even as a show-off dish for date night.

Serves: 2 as a main, or 4 as a starter

For the flatbread:

  • 200g plain flour

  • ½ tsp fine sea salt

  • 1 tsp baking powder

  • 150g Greek yoghurt

  • 1 tbsp olive oil

For the topping:

  • 2 ripe peaches, sliced into thick wedges

  • 1 tbsp olive oil

  • 1 tsp runny honey

  • 1 tbsp dukkah

  • 1 ball burrata (approx. 150g)

  • A handful of rocket leaves

  • Zest of ½ lemon

For the dukkah drizzle:

  • 1 tbsp runny honey

  • Juice of ½ lemon

  • 2 tsp dukkah

  • ½ tsp Aleppo chilli flakes or a pinch of mild paprika (optional)

  1. Make the flatbread dough: In a mixing bowl, combine flour, salt, baking powder, yoghurt and olive oil. Mix until a dough forms, then knead for 3–4 mins until smooth. Cover and let it rest while preparing the toppings.

  2. Roast the peaches: Preheat oven to 200°C (fan 180°C). Place peach slices on a lined tray. Drizzle with olive oil and honey, sprinkle with dukkah, and roast for 12–15 mins until golden and slightly blistered.

  3. Cook the flatbreads: Divide the dough into 2 balls. Roll each out to about ½ cm thick. Heat a dry pan over medium-high and cook flatbreads for 2–3 mins on each side until puffed and browned. Keep warm.

  4. Make the drizzle: In a small bowl, mix honey, lemon juice, dukkah, and chilli flakes (if using). Whisk until combined and fragrant.

  5. Assemble: Place the warm flatbreads on serving plates. Tear the burrata over each. Arrange roasted peaches, scatter rocket and lemon zest, then spoon over the dukkah drizzle generously.
