Move over gummy worms and toffee apples — this Halloween, it’s all about grown-up spooky treats with a twist. Our Spooky Herby Chocolate Bark turns traditional Halloween sweets upside down, infusing dark chocolate with the aromatic charm of Greenfields rosemary and thyme, and giving it a fiery kick of chilli. The result? A treat that’s mysterious, sophisticated and completely addictive — ideal for sharing at parties or packaging up in little ghostly gift bags.

200g good-quality dark chocolate (70% cocoa solids)
1 tsp Greenfields Crushed Chillies (or Aleppo Chilli for a softer warmth)
½ tsp Greenfields Dried Rosemary, finely crushed
½ tsp Greenfields Dried Thyme
1 tsp Greenfields Sea Salt (Coarse), lightly crushed
1 tbsp Greenfields Crispy Fried Onions (for texture and subtle savoury crunch)
1 tsp Greenfields Greek Blossom Honey (optional, for balance)
Edible shimmer or gold leaf (optional, for a magical effect)
Line a baking tray with parchment paper.
Melt the chocolate gently in a heatproof bowl set over simmering water, stirring until smooth.
Stir in the Greenfields chilli, rosemary, thyme and honey (if using). Mix well.
Pour the mixture onto the parchment, spreading it out evenly with a spatula to about ½ cm thickness.
Sprinkle over the sea salt and crispy fried onions for crunch.
Add a light dusting of shimmer or edible gold leaf to make it sparkle like enchanted midnight bark.
Place in the fridge to set for 45 minutes, or until firm.
Once set, break into eerie jagged shards and serve on a dark plate or inside a cauldron bowl for a spooky effect.
