Sticky Aleppo Hot-Honey Peach & Halloumi Skewers

‘Sweet peaches, salty halloumi and that gorgeous chilli glaze are such a brilliant combination’

Sweet fruit on a savoury skewer may sound unexpected, but peaches become beautifully succulent and lightly caramelised when cooked over high heat. Paired with salty halloumi, they create the sort of contrast that keeps everyone reaching for one more piece.

The glaze is where these skewers really shine. Floral honey delivers sweetness, Aleppo Chilli provides a warm, rounded heat and Smoked Paprika adds a subtle barbecue character. A final scattering of ruby-red sumac cuts through the richness with its fresh, citrus-like tang.

Serve the skewers at a barbecue, add them to a colourful sharing table or enjoy them with warm flatbreads and a crisp salad for an easy summer meal.

Serves 4 as a light meal or generous side dish. Makes approximately 8 skewers.

450g halloumi, drained

4 ripe but firm peaches

1 red onion

1 tbsp olive oil

Fresh mint leaves, to finish

For the Aleppo hot-honey glaze:

3 tbsp Greenfields Shahd Honey Unfiltered

1½ tsp Greenfields Aleppo Chilli

1 tsp Greenfields Smoked Paprika

½ tsp Greenfields Sumac, plus extra to finish

¼ tsp Greenfields Garlic Powder

A small pinch of Greenfields Himalayan Pink Salt with Chilli & Lime

1 tbsp fresh lemon juice

1 tbsp olive oil

You will also need:

8 reusable metal skewers or wooden skewers soaked in cold water for at least 30 minutes

  1. Heat a barbecue or griddle pan to a medium-high heat.
  2. Cut the halloumi into 24 substantial cubes. Cut each peach into six wedges, removing the stones.
  3. Peel the red onion and cut it into chunky pieces that will sit securely on the skewers.
  4. To make the glaze, place the honey, Aleppo Chilli, Smoked Paprika, Sumac, Garlic Powder, chilli-and-lime salt, lemon juice and olive oil in a small bowl. Stir until glossy and thoroughly combined.
  5. Thread the halloumi, peach wedges and red onion alternately onto the skewers. Brush them lightly with olive oil.
  6. Place the skewers on the hot barbecue or griddle. Cook for 2–3 minutes on each side, turning carefully, until the halloumi is golden and the peaches have dark char lines.
  7. During the final 2 minutes of cooking, brush the skewers generously with the hot-honey glaze. Turn them frequently so the glaze becomes sticky without burning.
  8. Transfer the skewers to a serving platter. Brush over any remaining glaze that has not touched the uncooked ingredients.
  9. Finish with an extra pinch of Sumac and a scattering of fresh mint leaves. Serve immediately while the halloumi is warm and tender.

 

Choose peaches that smell fragrant but still feel firm. Very soft peaches may fall from the skewers as they cook. Apply the honey glaze towards the end of cooking because its natural sugars can catch quickly over high heat. Cut the halloumi into generous cubes to help prevent it from splitting when threaded onto the skewers. Nectarines or fresh apricots work beautifully when good peaches are unavailable. For extra crunch, finish the skewers with Greenfields Dukkah or Black Sesame Seeds. To turn the skewers into a complete meal, serve them with lemony couscous, freekeh, warm flatbreads or a tomato and cucumber salad. The heat from Aleppo Chilli is typically gentle and rounded, making it particularly well suited to sweet ingredients such as honey and stone fruit. Contains milk.
