Strawberries with pomegranate and sumac syrup over yogurt sorbet

A fresh blend of flavours and textures, making an excellent choice for a light- yet satisfying – dessert to any meal. This recipe is easy to prepare and ideal for summer gatherings.

  • Preparation Time: 15 minutes
  • Cooking Time for Syrup: 10 minutes
  • Churning Time for Sorbet: 25-30 minutes
  • Freezing Time for Sorbet: 2 hours

Serves: 4

For the Pomegranate and Sumac Syrup:

  • 200ml pomegranate juice
  • 100g granulated sugar
  • 1 tbsp sumac

For the Yogurt Sorbet:

  • 500g Greek yogurt
  • 150ml milk
  • 100g caster sugar
  • 1 tbsp honey
  • 1 tsp vanilla extract

For the Strawberries:

  • 500g fresh strawberries, hulled and halved
  • Fresh mint leaves, for garnish
  • Prepare the Pomegranate and Sumac Syrup:
    1. In a medium saucepan, combine the pomegranate juice and granulated sugar.
    2. Bring to a simmer over medium heat, stirring until the sugar dissolves.
    3. Reduce the heat and let it simmer for about 10 minutes, or until the mixture thickens slightly.
    4. Stir in the sumac and remove from heat.
    5. Allow the syrup to cool completely before using.
  • Make the Yogurt Sorbet:
    1. In a large bowl, whisk together the Greek yogurt, milk, caster sugar, honey, and vanilla extract until smooth.
    2. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually about 25-30 minutes.
    3. Transfer the sorbet to a container and freeze for at least 2 hours, or until firm.
  • Assemble the Dessert:
    1. Divide the strawberries evenly among 4 serving bowls.
    2. Drizzle the cooled pomegranate and sumac syrup over the strawberries.
    3. Add a scoop of yogurt sorbet to each bowl.
    4. Garnish with fresh mint leaves.
