Sumac, Mint & Chilled Cucumber Ribbon Salad with Pomegranate & Black Nigella Seeds

‘It’s so simple, colourful and unbelievably refreshing’

Some recipes simply belong to summer. This is one of those dishes that feels instantly cooling from the very first bite. Inspired by colourful Middle Eastern sharing tables and long lazy lunches in the sunshine, delicate ribbons of cucumber are lightly dressed with lemon, extra virgin olive oil and fragrant Greenfields Sumac before being finished with fresh mint, pomegranate and Black Nigella Seeds. It’s light enough for the hottest afternoon yet packed with vibrant flavour and beautiful textures.

2 large cucumbers

1 tbsp Greenfields Sumac

2 tbsp fresh mint, finely chopped

2 tbsp fresh parsley, chopped

2 tbsp pomegranate seeds

1 tsp Greenfields Black Nigella Seeds

1 small red chilli, finely sliced (optional)

Juice of 1 lemon

2 tbsp extra virgin olive oil

½ tsp Greenfields Himalayan Pink Salt

Freshly ground Greenfields Black Pepper

Optional garnish:

Extra mint leaves

A sprinkle of Greenfields White Sesame Seeds

  1. Using a vegetable peeler or mandoline, slice the cucumbers lengthways into long ribbons and place into a large serving bowl.
  2. Sprinkle over the Greenfields Sumac, Himalayan Pink Salt and freshly ground Black Pepper.
  3. Add the chopped mint, parsley, sliced chilli and pomegranate seeds.
  4. Whisk together the lemon juice and olive oil before pouring over the salad.
  5. Gently toss everything together without bruising the cucumber ribbons.
  6. Scatter over the Greenfields Black Nigella Seeds and a few White Sesame Seeds if using.
  7. Chill in the refrigerator for around 30 minutes before serving to allow the flavours to develop.

Serve alongside grilled chicken, lamb, fish, falafel or part of a colourful summer mezze spread.
