Dukkah Chicken, Peach & Preserved Lemon Picnic Sandwich

A proper picnic sandwich should feel generous, taste even better after the flavours have mingled and survive the journey without becoming soggy. This one ticks every box.

Warmly spiced chicken meets ripe summer peach, tangy pickled onions and a cooling yoghurt spread sharpened with preserved lemon. Greenfields Dukkah adds a nutty crunch, while Sumac and Aleppo Chilli keep everything bright and lively. It looks abundant and colourful when sliced, making it perfect for a sunny lunch in the park, at the beach or in the garden.

Makes 4 generous picnic sandwiches.

For the dukkah chicken:

600g skinless chicken breast fillets

2 tbsp olive oil

2 tbsp Greenfields Dukkah

1 tsp Greenfields Ground Coriander

½ tsp Greenfields Aleppo Chilli

½ tsp Greenfields Garlic Powder

½ tsp Greenfields Himalayan Pink Salt with Garlic

Juice of ½ lemon

For the quick sumac onions:

1 small red onion, very thinly sliced

Juice of 1 lemon

1 tsp Greenfields Sumac

½ tsp caster sugar

A pinch of Greenfields Himalayan Pink Salt (Fine)

For the harissa and preserved lemon yoghurt:

150g thick Greek yoghurt

1½ tsp Greenfields Harissa Spice

1 tbsp finely chopped Greenfields Preserved Lemon rind

1 tsp Greekfields Greek Thyme Honey

1 tsp lemon juice

For assembling:

2 large ciabatta loaves or 4 individual ciabatta rolls

2 ripe but firm peaches, stoned and thinly sliced

80g rocket

½ cucumber, thinly sliced

A small handful of fresh mint leaves

2 tsp Greenfields Black Sesame Seeds

Extra Greenfields Sumac, for finishing

  • Place the chicken between two sheets of baking paper and gently flatten the thickest parts with a rolling pin until the fillets are an even thickness.
  • Mix the olive oil, Dukkah, Ground Coriander, Aleppo Chilli, Garlic Powder, garlic salt and lemon juice. Rub the mixture over the chicken and leave to marinate for 20 minutes.
  • Meanwhile, combine the red onion, lemon juice, Sumac, sugar and fine salt. Scrunch together gently with clean hands, then leave to soften.
  • Stir the yoghurt, Harissa Spice, Preserved Lemon, Greek Thyme Honey and lemon juice together. Chill until needed.
  • Heat a griddle or heavy frying pan over a medium-high heat. Cook the chicken for 5–7 minutes on each side, depending on its thickness, until golden and completely cooked through. The centre should reach 75°C.
  • Transfer the chicken to a plate and leave it to cool completely before slicing. This is important when preparing the sandwiches for a picnic.
  • Slice open the ciabatta. If the crumb is especially thick, pull a little from the centre to create space for the filling.
  • Spread the harissa and preserved lemon yoghurt generously over both cut sides of the bread.
  • Layer the bottom halves with rocket, cucumber, sliced chicken, peach, drained sumac onions and mint.
  • Scatter over the Black Sesame Seeds and a final pinch of Sumac. Close the sandwiches and press down gently.
  • Wrap each sandwich tightly in baking paper and chill until it is time to leave for the picnic. Slice immediately before serving, if preferred.
Choose peaches that are fragrant but still slightly firm. Very soft peaches release more juice and can make the bread soggy. The rocket creates a useful barrier between the bread and the wetter fillings. Drain the pickled onions thoroughly before adding them to the sandwich. For extra crunch, add sliced radishes or a handful of shredded little gem lettuce. For a vegetarian version, replace the chicken with 500g thickly sliced grilled halloumi. Reduce the added salt because halloumi and preserved lemon are already salty. Keep the sandwiches in a cool box with ice packs and do not leave them in direct sunlight. Eat within four hours of removing them from the fridge. Dukkah is an Egyptian-inspired mixture traditionally combining nuts, seeds and aromatic spices. Its toasted flavour works particularly well with chicken, fruit and creamy sauces.
