Summer chicken shawarma flatbread

‘The juicy shawarma chicken with mango and that gorgeous green sauce are simply summer in a flatbread’

Inspired by the generously filled, folded flatbread in the photograph, this summer version turns chicken shawarma into a gloriously colourful handheld feast. Greenfields Lebanese Shawarma Seasoning gives the chicken its aromatic savoury warmth, while sumac-pickled cabbage, juicy mango and a cool mint-and-tahini sauce bring brightness to every bite.

Serve the foldovers whole for a relaxed garden lunch, or slice them into wedges and arrange them on a large platter for sharing. They are messy in exactly the right way: crisp at the edges, molten in the middle and bursting with fresh summer colour.

Marinating time: 30 minutes, or overnight if preferred

Cooking time: 25 minutes

Total time: 1 hour 20 minutes, including minimum marinating time

For the shawarma chicken:

600g skinless, boneless chicken thigh fillets, sliced into strips

2 tbsp olive oil

2 tbsp lemon juice

2 tbsp Greenfields Lebanese Shawarma Seasoning

1 tsp Greenfields Smoked Paprika

½ tsp Greenfields Garlic Powder

½ tsp Greenfields Ground Cumin

½ tsp Greenfields Himalayan Pink Salt with Garlic

For the jewel-bright summer filling:

4 large soft flatbreads or naan-style flatbreads

150g mature Cheddar or mozzarella, grated

1 small ripe mango, peeled and cut into slim strips

½ small red cabbage, finely shredded

1 small carrot, cut into fine matchsticks

½ cucumber, deseeded and finely sliced

150g cherry tomatoes, quartered

4 radishes, finely sliced

2 spring onions, finely sliced

A generous handful of fresh coriander leaves

A generous handful of fresh mint leaves

2 tsp Greenfields Sumac

1 tbsp lemon juice

1 tsp Greenfields Greek Thyme Honey

¼ tsp Greenfields Himalayan Pink Salt with Chilli & Lime

For the green tahini drizzle:

4 tbsp tahini

100g Greek yoghurt

1 small garlic clove, crushed

Juice of ½ lemon

1 tbsp cold water, plus more as needed

15g fresh coriander

10g fresh mint

½ tsp Greenfields Dried Mint

A pinch of Greenfields Himalayan Pink Salt Fine

To finish:

1 tbsp Greenfields White Sesame Seeds

1 tsp Greenfields Black Sesame Seeds

1 tsp Greenfields Aleppo Chilli

Lemon wedges

  • Place the chicken in a bowl with the olive oil, lemon juice, Lebanese Shawarma Seasoning, smoked paprika, garlic powder, cumin and garlic salt. Mix thoroughly, cover and marinate in the fridge for at least 30 minutes.
  • Toss the red cabbage and carrot with the sumac, lemon juice, honey and chilli-and-lime salt. Gently scrunch everything together with clean hands, then leave it to soften while you prepare the remaining ingredients.
  • Make the green tahini drizzle by blending the tahini, yoghurt, garlic, lemon juice, cold water, coriander, mint, dried mint and salt until vivid green and smooth. Add a little extra water if needed; it should be thick but pourable.
  • Heat a large frying pan over a medium-high heat. Add the marinated chicken and cook for 8–10 minutes, turning regularly, until deeply golden, slightly charred and cooked through. Work in two batches if the pan is crowded.
  • Lay the flatbreads on a clean work surface. Cover one half of each with grated cheese, shawarma chicken, mango, cucumber, tomatoes, radishes and spring onions. Add a small handful of the sumac cabbage and plenty of fresh herbs.
  • Spoon over a little green tahini sauce, keeping some for serving. Fold the empty half of each flatbread over the filling and press gently.
  • Wipe out the frying pan and return it to a medium heat. Toast each foldover for 2–3 minutes on either side, pressing lightly with a spatula, until crisp and golden and the cheese has melted.
  • Scatter with the white and black sesame seeds and Aleppo chilli. Cut into wedges and serve immediately with the remaining pickled cabbage, green tahini drizzle and lemon wedges.
Chicken thighs remain juicier than chicken breast when cooked at a high temperature, making them particularly good for shawarma-style dishes. For the crispest result, drain any excess juice from the tomatoes and pickled cabbage before filling the flatbreads. The mango should be ripe enough to taste sweet but still firm enough to slice. Nectarine or fresh pineapple would also work beautifully. For a vegetarian variation, replace the chicken with 500g sliced mushrooms and one drained 400g tin of chickpeas. Coat and cook them with the same shawarma marinade. For outdoor entertaining, cook the chicken on a barbecue and warm the assembled flatbreads directly on the grill. The Greenfields Aleppo Chilli provides a rounded, gently fruity warmth. Add Greenfields Hot Chilli Flakes as well if you would like a fierier finish.
