Dried sliced lime is often associated with slow-cooked dishes, but its intensely aromatic flavour is wonderful in summer recipes too. Here, the lime slices are simmered briefly to create a tangy infusion for both the freekeh and the dressing.
Charred peaches bring sunny sweetness, while Greenfields Za’atar, Sumac and Aleppo Chilli give the salad a vibrant Middle Eastern character. It is substantial enough for dinner yet relaxed enough for a picnic or barbecue table.

For the lime-infused freekeh:
250g Greenfields Freekeh Lightly Toasted Cracked Wheat
4 Greenfields Dried Sliced Lime pieces
750ml water
½ teaspoon Greenfields Himalayan Pink Salt (Fine)
For the charred fruit and vegetables:
3 ripe but firm peaches, halved, stoned and cut into wedges
2 medium courgettes, sliced lengthways into ribbons
1 red onion, cut into slim wedges
2 tablespoons extra virgin olive oil
2 teaspoons Greenfields Za’atar
½ teaspoon Greenfields Aleppo Chilli
For the dressing:
75ml reserved dried lime infusion
3 tablespoons extra virgin olive oil
1½ tablespoons lemon juice
2 teaspoons Greenfields Greek Thyme Honey
1 teaspoon Greenfields Sumac
½ teaspoon Greenfields Ground Cumin
¼ teaspoon Greenfields Aleppo Chilli
1 small garlic clove, finely grated
Greenfields Himalayan Pink Salt (Fine), to taste
For assembling:
100g feta, roughly crumbled
40g unsalted pistachios, toasted and roughly chopped
15g fresh mint leaves, torn
15g fresh flat-leaf parsley, roughly chopped
2 tablespoons pomegranate seeds
1 teaspoon Greenfields Black Nigella Seeds
Extra Greenfields Sumac, for finishing
Step 1. Put the freekeh, dried sliced lime, water and salt into a saucepan. Bring to the boil, cover and simmer gently for 20–25 minutes, or until the freekeh is tender but still pleasantly chewy.
Step 2. Before draining, reserve 75ml of the fragrant cooking liquid for the dressing. Drain the freekeh thoroughly, discard the lime slices and spread the grains across a wide plate to cool slightly.
Step 3. Heat a barbecue or ridged griddle pan until very hot. Toss the peaches, courgettes and red onion with the olive oil, Za’atar and Aleppo Chilli.
Step 4. Cook the onion for 3–4 minutes on each side. Char the courgettes for approximately 2 minutes on each side and the peach wedges for 1–2 minutes on each cut surface. Work in batches so the ingredients develop dark grill marks without becoming soggy.
Step 5. Whisk the reserved lime infusion with the olive oil, lemon juice, honey, Sumac, cumin, Aleppo Chilli and garlic. Season with salt. The dressing should taste bright, aromatic and gently sweet.
Step 6. Toss the warm freekeh with two-thirds of the dressing, the mint and the parsley. Spoon it onto a large serving platter.
Step 7. Arrange the charred peaches, courgettes and onion over the freekeh. Scatter over the feta, pistachios, pomegranate seeds and Black Nigella Seeds.
Step 8. Spoon over the remaining dressing, dust lightly with extra Sumac and serve while the vegetables are still slightly warm.

What shipping methods are available and how much?
We use Royal Mail second class postal service for all orders. Shipping is free when you order is £30 or more or have 10 or more items in your basket, a standard £4.99 charge will be applied for any cart containing less than £30 worth of products or less than 10 products.
