  1. Vegetable Biryani: Sauté a mix of vegetables such as carrots, peas, peppers, and onions in oil. Add cooked basmati rice, biryani masala seasoning, salt, and a splash of water. Mix gently, cover, and let it simmer until the flavours blend together. Serve hot with raita (yogurt sauce) or pickle.
  2. Chicken Biryani: Marinate chicken pieces in yogurt, ginger-garlic paste, and biryani masala seasoning for a few hours. In a separate pan, sauté onions until golden brown. Add the marinated chicken and cook until it is tender. Layer the partially cooked basmati rice on top of the chicken, sprinkle with saffron-infused milk, and cook on low heat until the rice is fully cooked. Garnish with fried onions, mint leaves, and roasted cashews.
  3. Lamb Biryani: In a pressure cooker, heat oil and add whole spices like cardamom, cloves, cinnamon, and bay leaves. Sauté onions until golden brown. Add marinated lamb, biryani masala seasoning, ginger-garlic paste, and salt. Cook until the lamb is tender. Layer the parboiled basmati rice on top of the lamb, drizzle with saffron milk, and cook on low heat until the rice is fluffy and fully cooked. Serve hot with raita and a side salad.
  4. Fish Biryani: Marinate fish fillets with biryani masala seasoning, turmeric, and lemon juice. In a separate pan, sauté onions until golden brown. Add marinated fish and cook until it is almost done. Layer the partially cooked basmati rice on top of the fish, sprinkle with saffron-infused milk, and cook on low heat until the rice is fully cooked. Garnish with fried onions, coriander leaves, and serve with a squeeze of lemon.
