Uses of Baharat:
  1. Meat Seasoning: Baharat is often used as a seasoning for various meats, such as beef, lamb, chicken, or fish. It adds depth and complexity to grilled or roasted meats.
  2. Rice and Pilafs: Baharat can be added to rice dishes, pilafs, or biryanis to infuse them with a rich, aromatic flavour.
  3. Soups and Stews: It can be used to season soups, stews, and slow-cooked dishes, adding a warm and comforting taste.
  4. Vegetables and Legumes: Baharat works well with roasted or sautéed vegetables, lentil dishes, and bean stews.
  5. Marinades and Rubs: You can create flavourful marinades and rubs for grilling or barbecuing by combining baharat with oil, lemon juice, and other ingredients.

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons Baharat spice blend
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  1. Preheat the oven to 200°C (180°C fan-assisted or gas mark 6).
  2. In a small bowl, combine the Baharat spice blend and salt.
  3. Pat dry the chicken thighs with paper towels to remove any excess moisture.
  4. Rub the chicken thighs evenly with the spice blend mixture, ensuring they are coated on all sides.
  5. Heat olive oil in an oven-safe skillet or frying pan over medium heat.
  6. Place the chicken thighs, skin-side down, into the hot pan and sear for about 3-4 minutes until the skin is golden brown and crispy.
  7. Flip the chicken thighs using tongs and sear the other side for an additional 2-3 minutes.
  8. Transfer the skillet or pan with the chicken thighs to the preheated oven.
  9. Roast the chicken thighs for approximately 25-30 minutes or until they reach an internal temperature of 75°C (165°F) when tested with a meat thermometer.
  10. Once cooked, remove the chicken thighs from the oven and let them rest for a few minutes.
  11. Serve the Baharat-spiced roasted chicken thighs with your choice of sides, such as couscous, roasted vegetables, or a fresh salad.
Note: Cooking times may vary depending on the size of the chicken thighs and individual oven settings. It’s always recommended to use a meat thermometer to ensure the chicken is fully cooked.
