A fragrant, ancient seed with a nutty, slightly peppery flavour and delicate onion-like notes, black nigella seeds (often called kalonji) are a staple across Middle Eastern, Indian, and North African cuisines. Their deep black colour and subtle crunch make them an elegant finishing touch to many dishes.
These little seeds bring both flavour and beauty to the kitchen. Traditionally scattered over naan bread, flatbreads, and pastries, black nigella seeds are equally at home in modern cooking – sprinkled into salads, roasted vegetables, or even stirred through rice and lentils for a gentle aromatic lift. They’re naturally convenient, needing no grinding, and their versatile taste pairs well with savoury and even sweet creations.
Here are 10 authentic and modern ideas for using black nigella seeds:
Sprinkle on homemade naan or pitta before baking.
Add to flatbreads or bagels for a nutty crunch.
Toss into roasted carrots or aubergines.
Mix into yoghurt dips with cucumber and mint.
Scatter over rice pilafs or lentil stews.
Use in pickles and chutneys for a traditional touch.
Blend into spice rubs for grilled meats or vegetables.
Mix with sesame seeds for a modern bread topping.
Stir into soups for a subtle depth.
Add a pinch to honey-roasted nuts for a unique snack.
Tip: Toast the seeds lightly before sprinkling to enhance their nutty aroma.
