About Whole Pimento

Warm, aromatic and full-bodied, whole pimento – often called allspice – is a spice that captures the flavours of cinnamon, nutmeg and cloves in a single berry. Native to the Caribbean and Latin America, these dried brown berries bring a depth and richness that feels both exotic and comforting, perfect for both savoury and sweet cooking.

Whole pimento is valued for its convenience and versatility, fitting easily into modern kitchens where authentic flavour is prized. Unlike ground versions, the berries can be gently cracked, infused or toasted to release their oils at just the right intensity. They are a cornerstone of Caribbean jerk seasoning, a natural partner for stews, slow roasts, pickles and marinades, and an essential element of festive baking.

Here are 10 authentic and modern ideas for using whole pimento:

  1. Add a few berries to Caribbean jerk marinades for chicken or pork.

  2. Drop into mulled wine or spiced cider for a warming note.

  3. Use in pickling brines for vegetables or meats.

  4. Crush lightly and add to beef or lamb stews for earthy depth.

  5. Infuse in rice and pea dishes for an authentic Jamaican touch.

  6. Grind fresh to mix into gingerbread or spiced cakes.

  7. Toast and blend with cumin and coriander for Middle Eastern spice mixes.

  8. Add to homemade chutneys and relishes.

  9. Use in marinades for fish, especially mackerel and salmon.

  10. Brew into chai or spiced teas for a warming edge.

Extra tip: Toasting whole pimento lightly in a dry pan before use unlocks its rich, complex aroma.
