Nutty, smoky and deeply nourishing, Greenfields Lightly Toasted Freekeh is a wholesome ancient grain celebrated for its satisfying chew and unique roasted character. With its earthy depth of flavour and subtle smokiness, it brings Middle Eastern tradition into modern kitchens with ease.

Freekeh is young green wheat that has been harvested early, roasted and rubbed to reveal its delicate cracked grains. Ours is lightly toasted, giving it a gentle smokiness that works beautifully in both everyday meals and impressive entertaining dishes. It’s a versatile pantry staple—quick to cook, brimming with fibre, and an excellent base for balanced meals.

Here are 10 ways to enjoy it:

  1. Tossed into vibrant grain salads with herbs, tomatoes, and pomegranate.

  2. As a base for roasted vegetables and yoghurt dressings.

  3. In warming soups or broths, adding body and texture.

  4. Stirred into pilafs with caramelised onions and nuts.

  5. As a wholesome alternative to rice in risottos.

  6. Stuffed into peppers or aubergines with spiced lamb or chickpeas.

  7. Mixed with fresh herbs, lemon and olive oil for a refreshing side.

  8. Served with grilled fish or chicken for a smoky grain accompaniment.

Extra tips: For the fluffiest texture, rinse the freekeh well before cooking, then simmer gently until tender. A drizzle of olive oil or a squeeze of lemon juice brings the flavours alive.

Rinse before adding to water or stock, does not require soaking. For 100g freekeh, use half litre (500g) of water or stock, 1 tsp salt and a splash of olive oil (optional). Add contents to boiling water, return to the boil, cover and simmer for 15-20 mins or until tender. Drain excess water , can be eaten hot, or allowed to cool. Can refrigerate – use within 2 days. Try freekeh in:
  1. Pilaf: Freekeh can be cooked in a pilaf-style dish, similar to how you would prepare rice pilaf. Sauté some onions and garlic in olive oil, add freekeh, and then cook it with vegetable or chicken broth until it’s tender and fluffy.
  2. Salads: Freekeh can be used as a base for salads, similar to quinoa or bulgur. Cook the freekeh, let it cool, and then combine it with fresh vegetables, herbs, and a dressing of your choice. It adds a nutty and chewy texture to the salad.
  3. Stuffings: Freekeh can be used as a stuffing for vegetables like bell peppers, zucchini, or tomatoes. Mix cooked freekeh with herbs, spices, and other ingredients like nuts or dried fruits, and stuff it into the vegetables. Bake until the vegetables are tender and the stuffing is heated through.
  4. Soups and stews: Freekeh can be added to soups and stews to add texture and flavour. It can be simmered with vegetables, legumes, and spices to create a hearty and nutritious dish.
  5. Side dishes: Freekeh can be served as a side dish alongside roasted meats, grilled vegetables, or other main courses. Cook it in broth or water, season it with herbs and spices, and serve it as an alternative to rice or couscous.
