Bring depth and rustic charm to your dishes with thyme – from Sunday roasts to weekday pastas, this herb is a kitchen must-have.

Thyme

Typically described as:

A timeless herb with delicate, earthy flavours and a gentle hint of lemon, thyme is a true staple in both traditional and modern cooking. Its small, aromatic leaves carry a depth of taste that brings warmth and vibrancy to countless dishes across world cuisines.

Thyme is one of those herbs that makes cooking feel effortless yet elevated. It’s a key ingredient in Mediterranean kitchens, French provincial stews, Middle Eastern grills, and comforting British roasts. Whether used fresh or dried, it has the ability to transform a dish with just a pinch. Its subtle complexity pairs beautifully with roasted meats, vegetables, soups, breads and even infused oils.

Here are 10 authentic and modern ways to use thyme:

  1. Roast chicken with sprigs of thyme tucked under the skin.

  2. Infuse into olive oil for a rustic dip with bread.

  3. Add to slow-cooked lamb stews or Moroccan tagines.

  4. Sprinkle into creamy mushroom sauces for pasta.

  5. Enhance roast potatoes or root vegetables with a thyme-garlic rub.

  6. Use in homemade focaccia or rustic loaves for herby depth.

  7. Stir into tomato sauces or soups for a gentle savoury lift.

  8. Blend into marinades for fish or seafood grills.

  9. Infuse into honey or syrups for cocktails and desserts.

  10. Add to herby butters to melt over steak or vegetables.

Extra tip: Thyme holds its flavour well during long cooking, making it perfect for braises and slow-cooked dishes where other herbs may fade.

Recipe Ideas:
  1. Roasted Chicken: Rub dried thyme, along with salt, pepper, and other desired herbs, over a whole chicken before roasting it. The herb enhances the flavour and complements the poultry beautifully.
  2. Tomato-based Sauces: Add a pinch of dried thyme to tomato sauces, stews, or soups to give them a fragrant and savoury note.
  3. Roasted Vegetables: Toss vegetables like potatoes, carrots, or Brussels sprouts with olive oil, dried thyme, salt, and pepper. Roast them in the oven until they’re caramelised and tender.
  4. Herbed Breads: Incorporate dried thyme into your bread dough to add a delightful herbal aroma and flavour. It works particularly well in savoury bread and focaccia recipes.
  5. Herb-infused Butter: Mix dried thyme with softened butter and a touch of salt. Use it as a spread for bread, or melt it over grilled meats, fish, or roasted vegetables for an added burst of flavour.
Note that dried thyme is stronger in flavour than fresh thyme, so you’ll need less of it if substituting.
