Add a pinch of colour and zest to your cooking – brighten up your plate with sumac.

Sumac (Somaq)

Typically described as:

A vibrant spice with a tangy, citrusy flavour, sumac brings a burst of brightness to Middle Eastern and Mediterranean cooking. Its deep crimson hue and zesty taste make it a natural seasoning for grilled meats, salads, and dips, adding both colour and freshness in one sprinkle.

Sumac is a true kitchen secret for cooks who want flavour without fuss. It’s a quick and convenient way to add sharpness where you might otherwise use lemon juice or vinegar, and it’s widely loved for how easily it transforms everyday dishes into something special. Here are 10 authentic and modern ideas for how you can enjoy it:

  1. Sprinkle over hummus or baba ghanoush for a tangy lift.

  2. Use as a finishing touch on fattoush salad.

  3. Rub onto chicken or lamb before grilling.

  4. Dust over roasted vegetables for brightness.

  5. Stir into yoghurt with garlic and olive oil for a quick dip.

  6. Add to rice or bulgur for colour and zest.

  7. Mix with za’atar for an extra lemony edge.

  8. Sprinkle over avocado on toast.

  9. Use as a garnish for soups, especially lentil or tomato.

  10. Blend into salad dressings instead of lemon juice.

Extra tip: Sumac is perfect for those looking to reduce salt, as its tanginess enhances flavour without the need for much seasoning.

Try in recipes:
  1. Fattoush Salad: Make a refreshing Middle Eastern salad by combining chopped lettuce, cucumber, tomatoes, radishes, and fresh herbs. Sprinkle sumac on top, along with pita croutons, olive oil, and lemon juice.
  2. Grilled Chicken Skewers: Marinate chicken pieces in a mixture of olive oil, lemon juice, garlic, and sumac. Thread the chicken onto skewers and grill until cooked through. Serve with a side of yogurt sauce.
  3. Roasted Vegetables: Toss your favourite vegetables (such as eggplant, courgette, peppers, and onions) with olive oil, sumac, salt, and pepper. Roast in the oven until tender and slightly charred.
  4. Sumac-Roasted Potatoes: Cut potatoes into wedges and toss them in a mixture of olive oil, sumac, garlic powder, salt, and pepper. Roast in the oven until crispy and golden brown.
