Pine Honey with Aegean Seaside Flowers 400g

Unfiltered and unheated pine honey from Crete. Pine honey, also known as fir honey, is a unique and flavourful type of honey with a distinct taste derived from the nectar of pine trees. It is often treasured for its rich, woody flavour and its dark amber colour.
From the high peaks of the Cretan Mountains (The island in the southern most part of Europe). At the end of the summer we collect Pine Honey. A honey with special characteristics, aroma & flavour which is produced only in areas of the Aegean Sea. Pine Honey has a low sugar content and is an integral part of the Cretan diet since Minoan times. On occasions, raw honey may crystallise which indicates the purity of the honey. To bring it back to its original form simply place in a bowl of warm water. Pine honey can be used in various culinary applications and provides a unique twist to both sweet and savoury dishes:
  1. Sweetener: Use pine honey as a natural sweetener in your tea, coffee, or as a replacement for regular honey in baking recipes.
  2. Salad Dressings: Create a homemade salad dressing by combining pine honey with olive oil, lemon juice, and Dijon mustard for a delightful sweet and tangy flavor.
  3. Glazes and Marinades: Pine honey can be used as a glaze or marinade for meats, such as pork or chicken. Combine it with herbs, spices, and a splash of vinegar or soy sauce for a deliciously sticky and flavourful coating.
  4. Cheese Pairing: Drizzle pine honey over cheese, particularly aged and hard varieties like Pecorino or Parmigiano-Reggiano, for a sophisticated and contrasting taste experience.

Recipe idea: Try Pine Honey Roasted Carrots Ingredients:
  • 450g carrots, peeled and trimmed
  • 2 tablespoons pine honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme leaves (optional)
Instructions:
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the pine honey, olive oil, salt, and pepper. Mix well.
  3. Add the peeled and trimmed carrots to the bowl and toss them until they are evenly coated with the honey-oil mixture.
  4. Transfer the carrots to a baking sheet lined with parchment paper, making sure they are in a single layer.
  5. Roast the carrots in the preheated oven for approximately 25-30 minutes or until they are tender and caramelized. Stir or turn the carrots halfway through cooking for even browning.
  6. Remove the roasted carrots from the oven and sprinkle them with fresh thyme leaves (if desired) for an extra burst of flavor.
  7. Serve the pine honey roasted carrots as a side dish or as part of a roasted vegetable medley.
