Unfiltered honey, also known as raw honey, is honey that has not been processed or filtered after extraction from the beehive. It is characterised by its thick texture and rich flavour and  typically has a more robust and complex flavour compared to filtered honey.

Shahd honey features characteristics of the Sidr honey which is famously known for it’s health benefits. On occasions raw honey may crystalise which indicates it’s purity. To bring it back to it’s natural form simply place in a bowl of warm water. Try raw, unfiltered honey in:
  1. Sweetener: Unfiltered honey can be used as a natural sweetener in a variety of foods and beverages, such as teas, smoothies, oatmeal, yogurt, and baked goods.
  2. Salad Dressing: Combine unfiltered honey with ingredients like olive oil, vinegar, mustard, and herbs to create delicious homemade salad dressings.
  3. Marinades and Glazes: Unfiltered honey can add depth and sweetness to marinades for meats, poultry, or vegetables. It also makes a great glaze for roasted or grilled dishes.
  4. Drizzling: Due to its thick texture and intense flavour, unfiltered honey is perfect for drizzling over pancakes, waffles, toast, or fresh fruit.
  5. Beauty Treatments: Some people use unfiltered honey in DIY face masks, hair masks, and other beauty treatments due to its potential moisturising and soothing properties.
Try this recipe Idea: Honey-Glazed Salmon Ingredients:  
  • 4 salmon fillets
  • 2 tablespoons unfiltered honey
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs for garnish (e.g., parsley or dill)
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the unfiltered honey, soy sauce, lemon juice, olive oil, minced garlic, salt, and pepper.
  3. Place the salmon fillets on the prepared baking sheet and brush the honey glaze mixture evenly over the top of each fillet.
  4. Bake the salmon in the preheated oven for about 12-15 minutes or until cooked through and flaky.
  5. Once cooked, remove the salmon from the oven and let it rest for a few minutes. Garnish with fresh herbs.
  6. Serve the honey-glazed salmon with your choice of sides, such as roasted vegetables or a fresh salad.
