  • 1 whole chicken (approximately 1.5 kg)
  • 2 tablespoons Thai 7 spice blend
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon fish sauce
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon lemongrass paste
  • Salt and pepper, to taste
  • Lime wedges and fresh cilantro, for garnish
  1. Preheat your oven to 180°C (350°F) and line a roasting pan with aluminum foil.
  2. In a small bowl, combine the Thai 7 spice blend, vegetable oil, soy sauce, lime juice, honey, fish sauce, minced garlic, grated ginger, lemongrass paste, salt, and pepper. Mix well to create a marinade.
  3. Pat the chicken dry with paper towels and place it in the roasting pan. Using a basting brush, generously coat the chicken with the marinade, making sure to cover all sides. Reserve a small amount of the marinade for basting later.
  4. Cover the roasting pan with aluminum foil, creating a tent-like shape, and place it in the preheated oven. Roast the chicken for 45 minutes.
  5. After 45 minutes, remove the foil tent and baste the chicken with the reserved marinade. Continue roasting uncovered for another 30-40 minutes, or until the chicken is golden brown and cooked through. To check for doneness, insert a meat thermometer into the thickest part of the chicken thigh, and it should read 75°C (165°F).
  6. Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving. This allows the juices to redistribute, resulting in a juicier chicken.
  7. Carve the chicken into desired pieces and garnish with lime wedges and fresh cilantro.
  8. Serve the Thai 7-Spice Roasted Chicken alongside jasmine rice and steamed vegetables for a complete and flavourful meal.
