Greenfields perfectly blended jerk seasoning makes this famously flavourful dish
8 small or 4 large chicken pieces (skin removed)
4 tsp Greenfields jerk seasoning
1 tbsp soy sauce
4 tbsp tomato ketchup
2 tbsp Shahd honey
Vegetable oil (for greasing)
1 lime quartered
Rice – cook according to pack instructions
In a bowl place the jerk seasoning, soy sauce, tomato ketchup and honey and mix everything together.
Carefully cut slits into the chicken meat without cutting all the way through. Put the chicken into the jerk mixture and use your hands to move the chicken around so that it is thoroughly coated in the seasoning.
Cover and put in the fridge for at least 20 minutes (overnight if possible).
Preheat the oven on to 190°C / fan 170°C / gas 5.
Lightly grease with oil a roasting tray (with a heavy base), place the chicken and marinade into the tray.
Place in the oven and cook for 30 minutes, ensure the chicken is cooked through, the cooking time will vary slightly depending on the size of your chicken pieces so continue to check until the meat is no longer pink.
Delicious serve with rice and peas.
Squeeze a little lime juice over the chicken to serve
