Thai 7 spice roast chicken

  • 1 whole chicken (approximately 1.5 kg)
  • 2 tablespoons Thai 7 Spice blend
  • 1 tablespoon olive oil
  • 1 lime, zest and juice
  • 2 garlic cloves, minced
  • Salt to taste
  • Fresh coriander for garnish
  1. Preheat your oven to 190°C (375°F, Gas Mark 5).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. In a small bowl, combine the Thai 7 Spice blend, olive oil, lime zest and juice, minced garlic, and salt to form a paste.
  4. Rub the spice paste all over the chicken, both inside and out, ensuring it’s evenly coated.
  5. Place the chicken in a roasting tin and roast in the preheated oven for about 1 hour and 20 minutes, or until the juices run clear when the thickest part of the chicken is pierced with a skewer.
  6. Baste the chicken with its juices halfway through cooking to ensure it stays moist.
  7. Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving. This helps the juices redistribute, keeping the meat moist.
  8. Garnish with fresh coriander before serving.
